Baking Trade - Food Processing (Plant Baking) Certificate III - Download PDF

Plant Bakers (industrial bakers) prepare and bake bread loaves, rolls, pastries, biscuits and cakes by mixing, baking, filling, icing and decorating in an industrial rather than retail setting.  Tasks may include:

  • forming dough with a kneading machine
  • operating machines which roll and mould dough and cut biscuits
  • cutting, moulding, mixing and shaping pastry goods
  • operating plant baking machinery such as slicing and wrapping machines
  • monitor oven temperatures and breads appearance and
  • turn out, cool and check the cleanliness of equipment to ensure health and safety regulations are met

(ICF) denotes an Industry Curriculum Framework Course. An optional HSC exam in these courses is available to contribute to the Australian Tertiary Admissions Rank.

The Board of Studies will add units of competency that are listed in the school-based component of a students training plan which are not currently available in the relevant ICF SBA pathway.

To facilitate this schools are asked to complete the Application for inclusion of additional unit(s) of competency to the SBA pathway of an ICF form.
